I wish I could help you out on this! We had a wonderful re-enactor friend who passed away a few years ago, who would have been the perfect guy to tell you some stories.
I'll ask my husband to spread the word amongst his group and see if anyone would be interested in telling some of their tales.
Just a suggestion: When you complete the book, try getting the guys known as "suttlers" to handle some copies. Anything like this would be a big hit at re-enactments.
